Apple-Rice Stuffing
 
Prep Time:  5 minutes or less
Cook Time:  50 minutes
 
Serves:  16
Serving Size:  1/2 cup
 
Ingredients:
  • 3 dry cups apples, tart, peeled, sliced
  • 3 cups chopped onions
  • 3 cups celery, fresh, diced
  • 1 tablespoon margarine, canola-based, trans-fat free
  • 4 dry cups stuffing, bread, cooked
  • 3 dry cups rice, brown, cooked
  • 1 cup chicken broth, fat-free, low-sodium
Preparation:
  1. Preheat oven to 350 degrees
  2. Saute the apples, onions and celery in the margarine in a large non-stick skillet or medium saucepan
  3. When vegetables are soft (about 5 minutes), add teh prepared stuffing, rice and broth.  Mix well and place in a covered casserole or baking dish.  Bake for 45 minutes.
